# Ingredients:

01 - 1/2 cup of fresh, soft breadcrumbs
02 - 2 tablespoons warm beef broth
03 - 1/4 cup finely diced mushrooms
04 - 1/4 cup finely chopped carrots
05 - 1/4 cup finely chopped yellow onion
06 - 2 fresh garlic cloves, minced
07 - 1 large egg, whisked
08 - 1 tablespoon tomato ketchup
09 - 1/2 tablespoon Dijon mustard
10 - 2 teaspoons Worcestershire sauce
11 - 1/4 teaspoon kosher salt
12 - 1 pound lean ground beef

13 - 1/4 cup tomato ketchup
14 - 2 tablespoons packed brown sugar
15 - 1 teaspoon Dijon mustard

# Instructions:

01 - In a small mixing bowl, combine the fresh breadcrumbs with warm beef broth. Stir gently until every crumb is moistened and set this mixture aside to absorb the liquid.
02 - In a large mixing bowl, combine the diced mushrooms, chopped carrots, onions, and minced garlic. Add the whisked egg, soaked breadcrumb mixture, ketchup, Dijon mustard, Worcestershire sauce, and kosher salt. Mix everything together until well combined.
03 - Gently fold the ground beef into the vegetable mixture, being careful not to overmix. Shape the mixture into a compact, well-formed loaf that will fit comfortably in your air fryer basket.
04 - Preheat your air fryer to 360°F (182°C). Place the shaped meatloaf in the basket and cook for 20-25 minutes, or until the internal temperature reaches a safe 165°F (74°C).
05 - While the meatloaf cooks, whisk together ketchup, brown sugar, and Dijon mustard in a small bowl. During the last 5 minutes of cooking, brush this glossy glaze evenly over the top of the meatloaf.
06 - Remove the finished meatloaf from the air fryer and let it rest for 10-15 minutes before slicing. This resting period helps the juices redistribute for the most tender results.

01 - Make sure your air fryer basket is spacious enough to accommodate the meatloaf - a 5-quart capacity works perfectly for this recipe.
02 - For easier cleanup and to prevent sticking, consider lining your air fryer basket with aluminum foil or parchment paper, leaving space around the edges for proper air circulation.
03 - Never add parchment paper to the air fryer during preheating - only add it once you're ready to place the food inside.
