Zesty Avocado Feta Dip (Print Version)

# Ingredients:

01 - 2 large ripe avocados
02 - 1/3 cup sweet cherry tomatoes, diced
03 - 1/4 cup finely chopped red onion
04 - 2 tablespoons fresh cilantro, chopped
05 - 1 small jalapeño, seeds removed and finely diced

→ Dairy & Condiments

06 - 1/2 cup crumbled feta cheese
07 - 1 1/2 tablespoons cultured oil (Zero Acres or similar)
08 - 1 teaspoon red wine vinegar
09 - Juice of 2 fresh limes
10 - 1 teaspoon salt
11 - 1 teaspoon Chile Lime seasoning or Everything but the Elote

# Instructions:

01 - Start by finely dicing the jalapeño, red onion, and cherry tomatoes. Chop the cilantro into small pieces. Cut the avocados in half, remove the pits, and dice the flesh into bite-sized chunks.
02 - In a medium mixing bowl, gently add the diced avocado, tomatoes, jalapeños, red onion, and fresh cilantro.
03 - Squeeze the juice from both limes over the mixture. Drizzle with the cultured oil and red wine vinegar. Sprinkle with salt and your choice of Chile Lime or Everything but the Elote seasoning.
04 - Using a rubber spatula, gently fold everything together. Be careful not to overmix - you want the avocado pieces to maintain their shape rather than turning into guacamole.
05 - Sprinkle the crumbled feta cheese over the mixture and fold in lightly just until incorporated.
06 - Transfer to a serving bowl and enjoy immediately with tortilla chips or your favorite dippers!
