Cheesy zucchini side dish (Print Version)

# Ingredients:

01 - 2 medium zucchini, sliced into 1/4 to 1/2-inch rounds
02 - 1 tablespoon olive oil
03 - Salt and pepper to taste
04 - 1 cup freshly grated parmesan cheese (pre-shredded is also fine)

# Instructions:

01 - Preheat your oven to 450°F and line a broil-safe baking sheet with foil for easier cleanup (this step is optional but recommended).
02 - Arrange the zucchini slices on your baking sheet and drizzle with olive oil. Toss them around until they're all nicely coated, then spread them out in a single layer.
03 - Sprinkle a generous amount of salt and pepper over all the zucchini slices.
04 - Top each zucchini slice with a nice pile of parmesan cheese.
05 - Bake on the center rack for about 10 minutes, until you can easily pierce the zucchini with a fork. Then switch to the broiler on high and broil for 2-3 minutes, watching carefully until the cheese gets bubbly and develops a beautiful golden-brown color.
06 - Serve immediately while the cheese is still warm and melty. Enjoy!
