02 - 2 tablespoons honey or pure maple syrup
03 - 1 large egg
04 - 1 teaspoon pure vanilla extract
05 - 1½ cups quick-cooking oats
06 - 1 teaspoon ground cinnamon
07 - ¼ teaspoon fine sea salt

08 - ½ cup chocolate chips, shredded coconut, dried cranberries, or raisins

# Instructions:

01 - Heat your oven to 350°F and line a couple of baking sheets with parchment paper. Set them aside for later.
02 - In a large mixing bowl, mash those overripe bananas until they're nice and smooth. Don't worry about getting every single lump out.
03 - Stir in the honey, egg, and vanilla extract until everything is well combined and looks cohesive.
04 - Fold in the oats, cinnamon, and sea salt, stirring gently until the mixture comes together nicely.
05 - If you're using chocolate chips or other goodies, fold them in now until they're evenly distributed throughout the dough.
06 - Using a tablespoon or small cookie scoop, drop portions of dough onto your prepared baking sheets, spacing them about 2 inches apart.
07 - Bake for 12-15 minutes, until the tops look set and the bottoms are just lightly golden brown.
08 - Let the cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Enjoy them warm or at room temperature!
