Quick Salmon Bites with Sauce (Print Version)

# Ingredients:

→ Salmon

01 - 2 lbs fresh salmon filet
02 - 2 tbsp mayonnaise
03 - 1 tsp onion powder
04 - 1 tsp garlic powder
05 - 1 tsp chili powder
06 - 2 tsp garlic paste
07 - Garlic salt and pepper to taste

→ Bang Bang Sauce

08 - ¾ cup mayonnaise
09 - ½ cup Thai sweet chili sauce
10 - 1 tbsp Sriracha
11 - 1 tbsp soy sauce
12 - 1 tsp honey
13 - 1 clove garlic, freshly minced

# Instructions:

01 - Get your oven nice and hot at 450°F before you start prepping the salmon.
02 - Pat the salmon dry with paper towels. Remove the skin by carefully sliding a sharp knife between the skin and flesh, holding the skin tight while guiding the knife along. Trim off any stubborn bits that remain. Make sure frozen salmon is completely thawed first!
03 - Slice the salmon into generous chunks about 1-1.5 inches each and transfer them to a large mixing bowl.
04 - In a small bowl, mix together the mayo, onion powder, garlic powder, chili powder, and garlic paste. Season the salmon pieces with garlic salt and black pepper, then coat them evenly with the mayo mixture.
05 - Spread the seasoned salmon bites on a baking sheet in a single layer, giving them plenty of space (1-2 inches apart) so they can get nicely crisp on the outside.
06 - Bake for 10 minutes, then switch to broil for an additional 2-3 minutes until the tops are beautifully golden brown. Keep a close eye on them during broiling to prevent burning!
07 - While the salmon cooks, whisk together mayo, Thai sweet chili sauce, Sriracha, soy sauce, honey, and minced garlic to create the signature bang bang sauce.
08 - Once the salmon bites are done, drizzle generously with the bang bang sauce and serve immediately while still warm and tender.

# Notes:

01 - These salmon bites come together in just 20 minutes for a quick weeknight dinner option.
02 - For a rarer salmon, reduce roasting time to 7 minutes instead of 10.
03 - Using a meat thermometer is the most reliable way to check your salmon for doneness.
04 - Greek yogurt or light mayo can be substituted for a lighter version.
