Get your oven nice and hot at 450°F before you start prepping the salmon.

Pat the salmon dry with paper towels. Remove the skin by carefully sliding a sharp knife between the skin and flesh, holding the skin tight while guiding the knife along. Trim off any stubborn bits that remain. Make sure frozen salmon is completely thawed first!

Slice the salmon into generous chunks about 1-1.5 inches each and transfer them to a large mixing bowl.

In a small bowl, mix together the mayo, onion powder, garlic powder, chili powder, and garlic paste. Season the salmon pieces with garlic salt and black pepper, then coat them evenly with the mayo mixture.

Spread the seasoned salmon bites on a baking sheet in a single layer, giving them plenty of space (1-2 inches apart) so they can get nicely crisp on the outside.

Bake for 10 minutes, then switch to broil for an additional 2-3 minutes until the tops are beautifully golden brown. Keep a close eye on them during broiling to prevent burning!

While the salmon cooks, whisk together mayo, Thai sweet chili sauce, Sriracha, soy sauce, honey, and minced garlic to create the signature bang bang sauce.

Once the salmon bites are done, drizzle generously with the bang bang sauce and serve immediately while still warm and tender.
