Quick beef noodle dinner (Print Version)

# Ingredients:

→ Noodles & Vegetables

01 - 400g spaghettini pasta
02 - 1 small onion, thinly sliced into half moons (about 1 cup)

→ Beef & Marinade

03 - 500g beef steak (flank, sirloin or ribeye), thinly sliced against the grain
04 - 1 teaspoon cornstarch
05 - 3 teaspoons of the soy sauce mixture

→ Sauce Mix

06 - 5 tablespoons regular soy sauce
07 - 1½ tablespoons dark soy sauce
08 - 1 tablespoon sugar
09 - 1 teaspoon oil plus 2-3 tablespoons for frying

# Instructions:

01 - Cook the spaghettini according to package directions, but reduce cooking time by 1-2 minutes for al dente texture. Don't add salt to the water! When done, drain and lightly rinse to remove excess starch.
02 - In a small bowl, combine the regular soy sauce, dark soy sauce and sugar. Stir until sugar dissolves and set aside.
03 - Place your thinly sliced beef in a bowl. Add 2-3 teaspoons of the soy sauce mixture and the cornstarch. Mix well and let marinate for 5-10 minutes while you prepare other ingredients.
04 - Heat 2-3 tablespoons of oil in a large non-stick pan over high heat. Add the sliced onions and cook for about 3 minutes until soft and golden. Toss in the marinated beef and cook for another 3-5 minutes until browned. Finally, add the cooked spaghettini and the remaining soy sauce mixture. Stir-fry everything together for 2-3 minutes until the noodles have absorbed the sauce and everything is evenly mixed.

02 - You can substitute the beef with chicken, pork, or tofu for different variations.
03 - Spaghettini works best for texture - spaghetti is too thick and angel hair is too thin. Udon noodles are a great alternative if you have them.
