Easy Beef Sweet Potato (Print Version)

# Ingredients:

→ Protein & Seasonings

01 - 1 pound lean ground beef (ground turkey works great too)
02 - 1 teaspoon chili powder
03 - 1 teaspoon dried basil
04 - 3/4 teaspoon salt
05 - 1/2 teaspoon freshly ground black pepper
06 - 1/2 teaspoon onion powder
07 - 1 teaspoon fresh garlic, minced

→ Vegetables & Cooking Base

08 - 2 tablespoons olive oil or avocado oil
09 - 2 cups fresh carrots, peeled and diced
10 - 2 cups sweet potatoes, peeled and cubed (about 1 large or 2 medium)
11 - 1 teaspoon salt
12 - 1 teaspoon chili powder
13 - 1/2 teaspoon ground ginger
14 - 1/2 teaspoon onion powder
15 - 1/4 teaspoon red pepper flakes (use 1/2 teaspoon for extra heat)
16 - 1 cup beef broth or stock
17 - 1 pound Brussels sprouts, trimmed and diced

# Instructions:

01 - Heat a large skillet over medium-high heat and add your ground beef. Break it up with a wooden spoon or spatula as it cooks, stirring occasionally until it's nicely browned all over.
02 - Sprinkle in the salt, black pepper, chili powder, onion powder, basil, and minced garlic. Give everything a good stir and let it cook for another minute until the garlic becomes fragrant and golden. Transfer the seasoned beef to a plate and set aside.
03 - Pour the oil into the same skillet and let it heat up. Add your diced sweet potatoes and carrots, then season with salt, chili powder, ground ginger, onion powder, and red pepper flakes. Keep the heat at medium-high to get some nice caramelization on the vegetables. Stir frequently and cook for 5-10 minutes until the edges start to turn golden brown.
04 - Lower the heat to medium and return the cooked beef to the pan. Pour in the beef broth and add the diced Brussels sprouts. Give everything a gentle stir, then cover the skillet and let it simmer for 5-8 minutes, or until the Brussels sprouts reach your preferred tenderness.
