# Ingredients:

01 - 3 cups cooked beets, cut into bite-sized chunks
02 - 1/3 cup crumbly feta cheese
03 - 2 tablespoons chopped shelled pistachios
04 - 1/4 cup fresh parsley, finely chopped
05 - 2 tablespoons fresh mint leaves, finely chopped

→ For the Dressing

06 - 1 tablespoon good quality extra virgin olive oil
07 - Juice from half a fresh lemon
08 - Sea salt and freshly ground black pepper to taste

# Instructions:

01 - In a large mixing bowl, combine your chopped beets, crumbled feta, pistachios, and the freshly chopped parsley and mint.
02 - In a small bowl, whisk together the olive oil and freshly squeezed lemon juice until well combined.
03 - Pour the dressing over your salad and gently toss everything together. Take a moment to taste, then season with salt and pepper until it's just right.
