Summer Fruit Pizza (Print Version)

# Ingredients:

→ Cookie Base

01 - 1 package (16 ounces) ready-to-bake sugar cookie dough

→ Creamy Topping

02 - 4 ounces cream cheese, room temperature
03 - 2 tablespoons white sugar
04 - 1 teaspoon pure vanilla extract
05 - 8 ounces whipped topping, thawed

→ Fresh Fruits

06 - 1 can (15 ounces) mandarin orange segments
07 - 2 ripe kiwis, peeled and sliced
08 - 1 pound fresh strawberries, hulled and sliced
09 - 1 pint fresh raspberries
10 - ½ pint plump blueberries
11 - 1 can (15 ounces) pineapple chunks or fresh pineapple pieces

# Instructions:

01 - Set your oven to 350°F and generously coat a round pizza pan with cooking spray
02 - Beat together softened cream cheese, sugar, and vanilla in a mixing bowl until smooth and creamy. Gently fold in the whipped topping and refrigerate until needed
03 - Spread the cookie dough evenly across your prepared pan, keeping it about ⅛ inch thick. Prick the surface gently with a fork to prevent bubbling
04 - Place in the oven for 10-15 minutes, watching for lightly golden edges. Allow to cool completely before topping
05 - Drain your canned fruits thoroughly and pat dry with paper towels to remove excess moisture
06 - Spread the chilled cream mixture evenly over your cooled cookie base using a rubber spatula. Arrange your colorful fruits in eye-catching patterns. Refrigerate until serving time

# Notes:

01 - Perfect for summer gatherings and celebrations
02 - Recipe can be easily doubled for larger crowds
03 - For a patriotic flag design, use blueberries for stars and strawberries for stripes on a 9x13-inch pan
04 - Homemade sugar cookie dough works wonderfully if you prefer from-scratch baking
05 - Switch up the fruits based on season and preference - try mangoes, blackberries, or sliced bananas
