Fresh Greek Salad (Print Version)

# Ingredients:

01 - 1 large cucumber, cut into bite-sized pieces
02 - 1 pint of fresh grape tomatoes, cut in half
03 - 1 crisp green bell pepper, chopped
04 - ½ medium red onion, sliced paper-thin
05 - ½ cup pitted Kalamata olives, cut in half
06 - 4 oz quality feta cheese, broken into chunks
07 - Sea salt and freshly ground black pepper, to your liking

→ Homemade Dressing

08 - ⅓ cup good red wine vinegar
09 - Juice from 1 fresh lemon
10 - 1 tsp smooth Dijon mustard
11 - 2 garlic cloves, finely minced
12 - ½ tsp dried Mediterranean oregano
13 - ¼ tsp fine sea salt
14 - ¼ tsp freshly cracked black pepper
15 - ½ cup extra virgin olive oil

# Instructions:

01 - Gather all your fresh vegetables and toss the diced cucumber, halved grape tomatoes, chopped bell pepper, thinly sliced red onion, halved olives, and crumbled feta into a spacious mixing bowl.
02 - In a smaller bowl, combine the red wine vinegar, fresh lemon juice, Dijon mustard, minced garlic, oregano, salt, and pepper. While whisking constantly, slowly drizzle in the olive oil until everything comes together into a smooth, creamy dressing.
03 - Pour the homemade dressing over your prepared vegetables and gently fold everything together until well coated. Give it a taste and adjust with extra salt and pepper if needed.
