# Ingredients:

01 - 1 pound fresh large shrimp, cleaned and deveined
02 - 1 tablespoon olive oil, divided
03 - 1 teaspoon chili powder
04 - 1 teaspoon smoky chipotle pepper powder
05 - 1 teaspoon ground cumin
06 - ½ teaspoon sea salt
07 - 6-8 soft tortillas (corn or flour)

08 - 1 cup plain Greek yogurt
09 - 2 tablespoons extra virgin olive oil
10 - 1 fresh garlic clove
11 - ½ small jalapeño, seeds removed
12 - ¼ cup fresh cilantro leaves
13 - ¼ teaspoon kosher salt
14 - Zest and juice from 1 large lime
15 - 2 cups crisp shredded cabbage

17 - Fresh cilantro sprigs
18 - Sour cream or Greek yogurt
19 - Lime wedges for serving

# Instructions:

01 - Pat your shrimp completely dry with paper towels and place in a mixing bowl. Drizzle with half the olive oil and toss with chili powder, chipotle powder, cumin, and salt until evenly coated. Set aside while you make the sauce.
02 - Combine Greek yogurt, olive oil, garlic, jalapeño, cilantro, salt, lime zest, and lime juice in a food processor. Blend until smooth and creamy. Taste and adjust seasoning as needed.
03 - Place shredded cabbage in a bowl and mix with about half cup of the cilantro lime sauce. Add more sauce if you prefer it creamier, then set aside the remaining sauce for serving.
04 - Heat remaining olive oil in a large skillet over medium-high heat. Add seasoned shrimp and cook for about 4 minutes, just until they turn pink and are cooked through. Don't overcook or they'll become tough!
05 - If desired, warm tortillas in the microwave under a damp towel or in a 250°F oven. Fill each tortilla with shrimp, top generously with slaw and extra sauce, then add your favorite toppings. Serve immediately with lime wedges.
