# Ingredients:

01 - 1 lb fresh lean ground beef
02 - 1 lb lean ground pork
03 - 1 packet taco seasoning mix
04 - 12 oz bag of Doritos chips, crushed into small pieces
05 - 2 large eggs, lightly beaten
06 - 1 cup Mexican cheese blend, shredded
07 - 16 oz jar of your favorite salsa

08 - 8 oz additional salsa for topping
09 - 1 cup extra shredded cheese for finishing

# Instructions:

01 - Heat your oven to 350°F and line a large baking sheet with non-stick aluminum foil to make cleanup a breeze.
02 - In a large bowl, combine the ground beef, ground pork, taco seasoning, crushed Doritos, beaten eggs, cheese, and salsa. Mix everything together thoroughly with your hands until well combined.
03 - Using your hands, form the mixture into 7-8 individual mini meatloaves of equal size on the prepared baking sheet. This ensures they'll cook evenly together.
04 - Top each meatloaf with a generous spoonful of the remaining salsa and sprinkle with the extra shredded cheese.
05 - Place in the preheated oven and bake for 30-45 minutes, or until a digital meat thermometer inserted into the center reads 160°F for food safety.

# Notes:

01 - Crush your Doritos into fairly small pieces before mixing - this makes combining everything much easier and prevents large chunks.
