Easy Cajun Dirty Rice (Print Version)

# Ingredients:

→ Main Components

01 - 3 tablespoons olive oil
02 - 1/2 pound ground pork
03 - 1/2 pound ground beef
04 - 2 cups long-grain white rice
05 - 3 cups beef broth

→ Fresh Vegetables

06 - 1/2 medium yellow onion, diced
07 - 1 red bell pepper, diced
08 - 1 green bell pepper, diced
09 - 1 stalk celery, chopped
10 - 3 teaspoons minced garlic

→ Seasonings & Herbs

11 - 1 1/2 to 2 teaspoons salt, adjusted to taste
12 - 1 teaspoon freshly cracked black pepper
13 - 1 tablespoon Herbs de Provence or Italian seasoning blend
14 - 1/2 teaspoon chili powder
15 - Fresh curly parsley, finely chopped for garnish

# Instructions:

01 - Get your beef broth ready - you can use store-bought or mix hot water with beef broth concentrate if that's what you have on hand.
02 - Heat olive oil in a large skillet with a tight-fitting lid over medium-high heat. Toss in the diced onions, colorful bell peppers, celery, and garlic. Let them sizzle and soften for about 2 minutes until fragrant.
03 - Push all those beautiful vegetables to one side of your pan. Add the ground pork and beef to the empty space and let them brown nicely, breaking everything up with your spoon as you go - this should take about 4 to 5 minutes.
04 - Mix the meat and vegetables together, then stir in your rice, salt, black pepper, chili powder, herbs, and pour in all that flavorful beef broth. Give everything a good stir to combine.
05 - Bring the whole mixture to a rolling boil, then turn the heat down to a gentle simmer. Cover with your lid and let it cook undisturbed for 20 to 25 minutes until the rice is perfectly tender and has absorbed all the liquid.
06 - Remove from heat and fluff everything up with a fork. Fold in that fresh chopped parsley for a pop of color and freshness, then serve immediately while it's nice and hot.
