Heat your oven to 350°F/180°C and get your cookie sheets ready with parchment paper or silicone mats.

Throw the cake mix, oil, and eggs into a large bowl and mix everything together until well combined. Don't worry if the dough feels super thick and sticky - that's exactly how it should be!

Split the cookie dough in half and add different food coloring to each portion. Mix well until the color is evenly distributed throughout the dough.

Using a small cookie scoop (about 1 tablespoon size), scoop out balls of dough. Roll each ball in powdered sugar until well coated, then place them on your prepared cookie sheets, leaving about 2 inches between each cookie.
