Low Carb Cheeseburger Bowls (Print Version)

# Ingredients:

→ For the Burger Mixture

01 - 1 pound ground beef (85-90% lean)
02 - 1 teaspoon chili powder
03 - 1 teaspoon smoked paprika
04 - ½ teaspoon kosher salt
05 - ½ teaspoon granulated garlic
06 - ½ teaspoon onion powder
07 - ¼ teaspoon black pepper, freshly ground

→ For the Smoky BBQ Ranch

08 - ½ cup ranch dressing (reduced-fat or full-fat works)
09 - 1 tablespoon BBQ sauce
10 - ½ teaspoon Dijon mustard
11 - ¼ teaspoon smoked paprika

→ For the Bowls

12 - 3 cups shredded iceberg lettuce
13 - 3 cups chopped romaine lettuce (about 1 heart)
14 - 1 cup diced cucumber
15 - 1 cup diced tomato
16 - 1 large avocado, chopped
17 - ½ cup chopped pickle chips (bread and butter or dill)
18 - ¼ cup finely diced red onion
19 - ¾ cup shredded cheddar cheese
20 - 6 slices bacon, cooked and crumbled
21 - Crushed Doritos for topping (optional)

# Instructions:

01 - Place your ground beef in a nonstick skillet and set it over medium heat. Break up the meat with a wooden spoon as it browns. Once it's fully cooked, drain off any excess fat and put the skillet back on the burner. Sprinkle in all your seasonings and stir everything together for about 2 minutes. Take it off the heat and let it cool down while you prep everything else.
02 - Grab a small bowl and combine your ranch dressing, BBQ sauce, Dijon mustard, and smoked paprika. Whisk it all together until it's nice and smooth.
03 - Toss both lettuces together in a big bowl, then divide them among 4 serving bowls or plates. Now comes the fun part - layer on your seasoned beef, cucumber, tomato, avocado chunks, pickles, red onion, shredded cheese, and bacon bits. Drizzle that smoky ranch over the top and finish with some crushed Doritos if you're feeling it. Or better yet, set everything out buffet-style and let everyone customize their own bowl exactly how they like it.

# Notes:

01 - These bowls are perfect for meal prep! Just cook the beef ahead of time and let it cool completely before portioning it out.
02 - Store your prepped ingredients in separate containers (two-compartment containers work great). Keep the cooked beef separate from the fresh veggies.
03 - Pack the dressing in small containers on the side to keep everything fresh and crisp.
04 - Your prepared bowls will stay good in the fridge for 3 to 4 days. Wait to slice and add the avocado until you're ready to eat.
