Cheesy beef egg rolls (Print Version)

# Ingredients:

→ For the Egg Rolls

01 - 1 pound ground beef
02 - 1/2 medium yellow onion, finely chopped
03 - 1 tablespoon vegetable oil
04 - Salt and freshly ground black pepper to taste
05 - 5 slices American cheese
06 - 1/2 cup diced pickles
07 - 14 egg roll wrappers
08 - 1 egg white
09 - Oil for frying

→ For the Dipping Sauce

10 - 1/4 cup mayonnaise
11 - 1 tablespoon tomato paste
12 - 1 garlic clove, pressed
13 - 1 teaspoon paprika
14 - Salt and freshly ground black pepper to taste

# Instructions:

01 - Heat a medium pan over medium heat and add a tablespoon of vegetable oil. Toss in your chopped onions and sauté until they become soft and translucent.
02 - Add your ground beef to the pan, breaking it up as much as possible with your spatula. Season with a pinch of salt and pepper, cover and cook until the meat starts to brown. Keep stirring and breaking up any clumps. Once cooked through, drain off all the juices and transfer the meat to a mixing bowl.
03 - Break up the cheese slices and add them to the hot beef. Mix everything together until the cheese melts completely and gets thoroughly incorporated. Then stir in those tangy diced pickles for that classic cheeseburger flavor.
04 - While you're preparing to roll, heat your oil to about 350°F for frying.
05 - Gently whisk your egg white in a small bowl and keep it close by for sealing the wrappers.
06 - Place an egg roll wrapper on your work surface so it looks like a diamond. Spoon about 2 tablespoons of your cheeseburger filling in a line across the middle, leaving about an inch of space on each side. Fold the corner closest to you over the filling and tuck it underneath. Next, fold both side corners toward the center - it'll start looking like an open envelope. Dip your fingers in the egg white and run it along the edges of the wrapper for a better seal. Finally, carefully roll it up to complete your egg roll.
07 - Fry your egg rolls in small batches until they're golden brown, making sure to turn them once the bottom side gets that perfect golden color.
08 - While your egg rolls are frying or cooling, whisk together all the sauce ingredients until smooth and well combined.
09 - Serve your hot, crispy cheeseburger egg rolls with the dipping sauce and watch them disappear!

# Notes:

01 - These egg rolls are best wrapped just before cooking - don't prepare them too far in advance or the wrappers may dry out and crack.
02 - For an eggless option, you can use a cornstarch slurry (2 teaspoons cornstarch mixed with 1/4 cup cold water) instead of egg white to seal the wrappers.
03 - You can air fry these at 390°F for 9-11 minutes, turning halfway through, for a healthier but still crispy alternative.
04 - If baking, place on a parchment-lined sheet and bake at 425°F for about 15 minutes until golden brown (note: baked egg rolls will be less crispy than fried or air-fried).
