Cheesy Zucchini Garlic Bites (Print Version)

# Ingredients:

01 - 2 large zucchinis, grated and squeezed dry (about 2 cups)
02 - 2 garlic cloves, finely minced
03 - 1/2 cup breadcrumbs
04 - 3/4 cup grated parmesan cheese
05 - 1/2 cup shredded cheddar cheese
06 - 2 tablespoons chopped fresh parsley
07 - 2 tablespoons chopped fresh chives
08 - 2 large eggs
09 - 1/4 teaspoon salt
10 - 1/4 teaspoon black pepper
11 - Marinara sauce or ranch dressing, for serving

# Instructions:

01 - Heat your oven to 400 degrees Fahrenheit.
02 - Grate your zucchini using a box grater, then wrap it in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step really matters for getting crispy bites! Transfer the dried zucchini to a large mixing bowl.
03 - Add the minced garlic, breadcrumbs, both cheeses, parsley, chives, eggs, salt, and pepper to the bowl with the zucchini. Mix everything together until well combined.
04 - Line a baking sheet with parchment paper or a silicone mat. Using a small cookie scoop or spoon, portion out about 2 tablespoons of mixture for each bite onto the prepared sheet. Gently shape each portion into a small nugget with your hands. Space them evenly on the pan. You should get around 20 bites total.
05 - Pop the pan in the oven and bake for 20 to 22 minutes, until the bites turn golden brown with crispy edges. Serve warm with your favorite dipping sauce on the side.
