Spiced Holiday Cookies (Print Version)

# Ingredients:

→ Cookie Dough

01 - ½ cup room temperature unsalted butter (or soft coconut oil as an alternative)
02 - ⅓ cup dark brown sugar, firmly packed
03 - ⅓ cup granulated white sugar
04 - ⅓ cup unsulphured blackstrap molasses
05 - 1 teaspoon pure vanilla extract
06 - 2 cups all-purpose flour, measured by spooning into cup and leveling
07 - 2 teaspoons ground cinnamon
08 - 1 teaspoon baking soda
09 - 1 teaspoon ground ginger
10 - ½ teaspoon ground cardamom
11 - ½ teaspoon fine sea salt
12 - 1 tablespoon water, with extra on hand if needed

→ For Coating

13 - ⅓ cup cane sugar for rolling the cookies

# Instructions:

01 - Start by heating your oven to 350°F. Grab a large baking sheet and cover it with parchment paper to prevent sticking.
02 - Using a stand mixer with the paddle attachment or a hand mixer, beat together the butter, brown sugar, and white sugar until well combined and fluffy. Pour in the molasses and vanilla extract, then mix everything together until smooth.
03 - Take a separate medium-sized bowl and whisk together the flour, cinnamon, baking soda, ginger, cardamom, and salt. Slowly add this flour mixture to your wet ingredients in batches, mixing well after each addition. Once everything is incorporated, stir in the tablespoon of water.
04 - Use a 2-inch cookie scoop to portion out the dough, then roll each portion between your palms to form smooth balls. If the dough seems too crumbly or dry, add another ½ tablespoon of water and mix it in. Roll each ball in the cane sugar until completely coated, then place them on your prepared baking sheet, spacing them about 2 inches apart. Gently press down on the top of each ball to flatten slightly.
05 - Pop the baking sheet in the oven and bake for 10 minutes. You'll know they're ready when they look puffed up with beautiful cracks forming on top. Take them out and let them rest on the baking sheet for 10 minutes before moving them to a wire rack to cool down completely.
