Fresh pasta dinner idea (Print Version)

# Ingredients:

→ Pasta and Protein

01 - 8 ounces whole wheat fusilli pasta (or your favorite shape)
02 - 12 ounces chicken breast, cooked and cut into bite-size pieces

→ Fresh Vegetables

03 - 1 romaine lettuce heart, chopped (about 8 ounces)
04 - 1 pint cherry or grape tomatoes, halved

→ Toppings and Dressing

05 - ¾ cup croutons
06 - ⅓ cup freshly grated Parmesan cheese
07 - 1 batch Homemade Caesar Dressing

# Instructions:

01 - Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package instructions. Drain in a colander, rinse under cold water, then shake off as much excess water as possible. Set aside to cool.
02 - Cut cooked chicken breasts into bite-size pieces. If you need to cook chicken, try using leftover roasted chicken or follow one of the cooking methods in the notes.
03 - Prepare the Homemade Caesar Dressing if you haven't already.
04 - Shake out the pasta once more, then add it to a large serving bowl. Top with the chicken, romaine, tomatoes, croutons, and Parmesan. Drizzle with Caesar dressing and toss to combine. Enjoy cold or at room temperature.

# Notes:

01 - This pasta salad can be made 1 day in advance.
02 - For leftovers, make extra dressing to revive the salad before serving, or use a squeeze of lemon juice.
