02 - 2 tablespoons fajita seasoning blend
03 - 1 tablespoon vegetable oil

→ Vegetables & Toppings

04 - 2 medium bell peppers, sliced into strips
05 - 1 medium yellow onion, thinly sliced
06 - 1½ cups shredded melting cheese
07 - Fresh cilantro leaves for finishing

# Instructions:

01 - Heat your oven to 400°F (200°C) and get your baking dish ready.
02 - Place chicken breasts in your baking dish and coat them thoroughly with fajita seasoning and oil, using your hands to ensure every piece gets well-seasoned.
03 - Layer the sliced bell peppers and onion over the seasoned chicken, then sprinkle with a bit more seasoning and top generously with shredded cheese.
04 - Place the uncovered casserole in the oven and bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C).
05 - Remove from oven and serve immediately, topped with fresh cilantro leaves for a bright finish.

# Notes:

01 - Check doneness by inserting a thermometer into the thickest part of the chicken - it should read 165°F (74°C)
02 - For quicker cooking, cut chicken into smaller cubes and reduce baking time accordingly
03 - You can add cooked pasta (al dente) to make this even more filling
04 - For lower calories, skip the cheese and use a mixture of parmesan and panko breadcrumbs instead
05 - Pairs beautifully with garlic butter pasta, Mexican rice, or cauliflower rice for a low-carb option
06 - Reheat leftovers in a 350°F oven for 15-20 minutes or use the microwave for convenience
