Creamy Chicken Wine Pasta (Print Version)

# Ingredients:

→ For the Chicken

01 - 5-6 strips bacon, cut into small pieces
02 - 2 large chicken breasts, cut in half lengthwise
03 - 1/2 teaspoon garlic powder
04 - Salt and pepper to taste
05 - Flour for dredging
06 - 2 tablespoons butter
07 - 7 ounces cremini mushrooms, sliced
08 - 1/4 teaspoon Italian seasoning
09 - 3 cloves garlic, minced
10 - 1/2 cup Riesling white wine
11 - 3/4 cup heavy cream

→ For the Pasta

12 - 8 ounces uncooked spaghetti
13 - 2 tablespoons butter
14 - 1/2 cup freshly grated parmesan cheese

# Instructions:

01 - Start a large pot of salted water boiling for the spaghetti. Cook it al dente according to package directions, timing it to finish around the same time as the chicken. After draining, return pasta to the pot, immediately toss with 2 tablespoons butter and 1/2 cup parmesan until smooth and well-coated. Keep covered until serving time.
02 - Cut the bacon into small pieces (kitchen shears work great for this) and fry in a skillet over medium-high heat until crispy. Remove skillet from heat. Transfer bacon to a paper towel-lined plate, leaving 2-3 tablespoons of bacon fat in the skillet.
03 - Slice chicken breasts lengthwise into 4 thinner pieces. Season each with garlic powder and some salt & pepper (go easy on salt since bacon is already salty). Coat in flour, shaking off excess. Return skillet to medium-high heat and once hot, add chicken and cook for 4-5 minutes until golden but not fully cooked through. Transfer to a plate.
04 - In the same skillet, add butter, mushrooms, and Italian seasoning. Cook for 5-6 minutes until mushrooms release their water, it evaporates, and they develop a nice sear.
05 - Stir in minced garlic and cook for about 1 minute until fragrant. Add Riesling wine to the skillet and scrape any browned bits from the bottom of the pan. Let bubble until liquid reduces by half, about 2-3 minutes.
06 - Stir in heavy cream, then return chicken and bacon to the skillet. Cook for about 5 minutes until sauce thickens slightly and chicken is cooked through. Spoon sauce over chicken and season with extra salt & pepper if needed. Serve immediately over the buttered parmesan pasta.
