Cilantro Lime Slaw (Print Version)

# Ingredients:

→ Fresh Herb Dressing

01 - 1 cup creamy plain Greek yogurt
02 - 1/2 cup fresh cilantro leaves, tightly packed
03 - 1/4 cup freshly squeezed lime juice
04 - 1/2 teaspoon ground cumin
05 - 1/2 teaspoon fine sea salt
06 - 1/4 teaspoon freshly ground black pepper
07 - 3 green onions, green parts only
08 - 2 fresh garlic cloves
09 - 1 jalapeño or serrano pepper, stems and seeds removed (optional)

→ Slaw Base

10 - 1 bag (14-ounce) pre-shredded coleslaw mix, about 7-8 cups

# Instructions:

01 - Add the Greek yogurt, fresh cilantro, lime juice, cumin, sea salt, black pepper, green onion tops, garlic, and jalapeño (if you're using it) into your blender or food processor. Give it a few quick pulses until everything comes together into a smooth, creamy mixture.
02 - Pour the coleslaw mix into a big mixing bowl. Drizzle that gorgeous green dressing right over the top, then toss everything together until every strand of cabbage is nicely coated. Taste it and add a bit more pepper or a squeeze of lime if it needs it.
03 - You can dig in right away for that crisp, fresh crunch, or pop it in the fridge covered for up to a day - it actually gets even better as the flavors meld together!

# Notes:

01 - For a more traditional taste, swap the Greek yogurt for mayonnaise, or try a half-and-half blend for the best of both worlds.
02 - Make your own coleslaw mix by combining 7 cups of shredded cabbage (any color you like) with 1 cup of shredded carrots.
03 - No blender? No problem! Just finely chop all the herbs and aromatics by hand, then whisk everything together in a bowl.
04 - This slaw works beautifully as a side dish or as a fresh topping for tacos, burgers, and sandwiches.
