Heat your oven to 400°F and line a large rimmed baking sheet with parchment paper. Wash and slice your peaches into wedges, removing the pits as you go.

Toss the fresh peach slices with sugar, cinnamon, nutmeg, and vanilla right on the prepared baking sheet. Let them sit for about 10 minutes so the natural juices start flowing and create a lovely syrup.

Slide the baking sheet into your preheated oven and roast for 7-16 minutes, depending on how soft you like your peaches. They should be tender and caramelized around the edges when done.

Let them cool slightly before serving, or enjoy them warm straight from the oven. They're incredible over vanilla ice cream or Greek yogurt!
