04 - 2 large eggs, room temperature
05 - 1 teaspoon vanilla extract
06 - 1 1/2 cups all-purpose flour
07 - 2 teaspoons cornstarch
08 - 1/4 teaspoon baking powder
09 - 1/2 teaspoon salt
10 - 1/2 teaspoon ground cinnamon
11 - 6 oz cream cheese chips or white chocolate chips

→ For the Cinnamon Sugar Topping

12 - 3 tablespoons firmly packed light brown sugar
13 - 1 tablespoon ground cinnamon

→ For the Cream Cheese Frosting

14 - 1/2 cup powdered sugar
15 - 1 tablespoon soft spreadable full-fat cream cheese
16 - 1 teaspoon vanilla extract

# Instructions:

01 - Heat your oven to 325°F (165°C/145°C Fan). Line an 8-inch square baking pan with parchment paper for easy removal later.
02 - In a large bowl, whisk the melted butter with both sugars until smooth and well combined. Add eggs and vanilla, mixing until the batter looks glossy.
03 - Sift in the flour, cornstarch, baking powder, salt, and cinnamon. Fold everything together with a spatula until just combined - don't overmix!
04 - Gently fold in the cream cheese chips (or white chocolate chips if using) until evenly distributed throughout the batter.
05 - Mix the brown sugar and cinnamon in a small bowl. Pour batter into the prepared pan, then sprinkle the cinnamon sugar mixture generously over the top.
06 - Take a knife and lightly swirl the cinnamon sugar into the batter. This spreads that wonderful cinnamon flavor throughout the blondies.
07 - Bake in the preheated oven for 40-50 minutes. You'll know they're done when a toothpick inserted in the center comes out mostly clean with just a few moist crumbs.
08 - Let the blondies cool completely in the pan for about 2 hours. This waiting time is crucial for them to set properly and achieve that perfect chewy texture.
09 - Mix powdered sugar, cream cheese, and vanilla in a small bowl until smooth. The consistency should be thick but pourable - like honey.
10 - Drizzle or pipe the cream cheese glaze over the cooled blondies. Cut into 16 squares and enjoy your cinnamon roll inspired treats!

# Notes:

01 - These blondies taste like cinnamon rolls but are much easier to make - no yeast or rising time needed!
02 - The blondies will keep in an airtight container at room temperature for up to 3 days, or can be frozen for longer storage.
03 - For an extra special touch, warm individual blondies in the microwave for 10-15 seconds before serving.
