Coconut Lime Popsicles (Print Version)

# Ingredients:

01 - 2¾ cups rich coconut milk
02 - ¾ cup fresh lime juice (from about 6-7 medium limes)
03 - ¼ cup pure honey (or swap with agave syrup or regular sugar)
04 - 1 tablespoon bright lime zest

# Instructions:

01 - Get your popsicle mold ready by placing it on a small baking sheet or tray - this makes it easier to move around later.
02 - Grab a mixing bowl (one with a spout works great) and whisk together all your ingredients until everything's beautifully combined and smooth.
03 - Pour your creamy mixture into the popsicle molds, pop in those sticks, and let them freeze for a solid 4-6 hours until they're completely frozen through.
04 - When you're ready to eat them, run some warm water over the outside of the mold to help release the popsicles, then carefully remove and serve immediately while frozen.

01 - These homemade popsicles will stay fresh in your freezer for up to 6 months when stored in an airtight container.
02 - When picking limes, look for ones that feel heavy for their size and are firm but have just a tiny bit of give when you press them.
03 - If you're a bit short on fresh lime juice, don't worry - you can top it off with some quality bottled lime juice.
04 - This recipe is designed for molds that make 10 three-ounce popsicles, so you might need to adjust if your mold is different.
