Coconut Mojito Mocktail (Print Version)

# Ingredients:

01 - 1/2 cup light canned coconut milk
02 - 1 fresh lime
03 - 4 ounces ginger beer
04 - 4 ounces sparkling water or seltzer
05 - 20 fresh mint leaves
06 - Sea salt for glass rimming

# Instructions:

01 - Pour some sea salt into a shallow dish. Slice your lime and rub a piece around the rim of each tall glass to coat with lime juice. Dip the glass rims into the salt dish and rotate until they're nicely coated. Set your prepared glasses aside.
02 - Divide the mint leaves evenly between your two glasses. Using a muddler or the back of a spoon, gently crush the mint until you can smell that wonderful minty aroma releasing.
03 - Pour the coconut milk evenly into both glasses, then squeeze in the lime juice. Add the ginger beer and sparkling water, followed by ice if you'd like it extra cold. Give everything a good stir until well combined and serve right away.
04 - If you prefer, you can blend all the mocktail ingredients together until smooth, then pour into your salt-rimmed glasses and enjoy immediately. This creates a slightly different texture but tastes just as amazing.
