Creamy Mashed Cauliflower (Print Version)

# Ingredients:

01 - 1 medium cauliflower head (about 2 pounds), cut into florets
02 - 2 tablespoons unsalted butter, melted
03 - 7 cloves garlic, roasted until golden
04 - ⅛ to ¼ teaspoon Dijon mustard
05 - ¼ to ½ teaspoon fine sea salt
06 - Freshly cracked black pepper to taste

07 - Fresh chives, finely chopped (optional garnish)

# Instructions:

01 - Fill a large pot with water and add a generous pinch of salt. Bring to a rolling boil over high heat. Add the cauliflower florets and cook until they're completely tender when pierced with a knife, roughly 10 minutes. Drain thoroughly in a colander.
02 - Transfer the drained cauliflower to your food processor. Add the melted butter, roasted garlic cloves, Dijon mustard, salt, and a few grinds of black pepper. Pulse and blend until you achieve a smooth, creamy consistency. Taste and adjust seasoning as needed. Serve immediately, topped with fresh chives if you like.
