Fresh Apple Pecan Salad (Print Version)

01 - 10 oz fresh spring lettuce mix with spinach (or just baby spinach)
02 - 3 medium gala apples, cored and sliced into thin pieces
03 - 1 cup pecans, lightly toasted and roughly chopped
04 - 1 cup crumbled feta cheese
05 - 1/2 cup dried cranberries
06 - 12 oz bacon, cooked until crispy and chopped
07 - 1/2 small red onion, thinly sliced into strips

→ Maple-Cider Vinaigrette

08 - 1/2 cup good quality olive oil
09 - 1/4 cup apple cider vinegar
10 - 2 Tbsp pure maple syrup (not pancake syrup)
11 - 1 Tbsp dijon mustard
12 - 1/4 tsp salt, or more to taste
13 - 1/4 tsp freshly ground black pepper

# Instructions:

01 - Combine olive oil, apple cider vinegar, maple syrup, dijon mustard, salt and pepper in a bowl and whisk until smooth and well blended. Alternatively, add all ingredients to a mason jar, seal tightly with the lid, and shake vigorously until combined.
02 - In a large salad bowl, layer the spring lettuce mix, apple slices, toasted pecans, crumbled feta, dried cranberries, crispy bacon pieces, and red onion strips.
03 - Just before serving, drizzle the maple-cider vinaigrette over the salad and gently toss everything together until all ingredients are lightly coated with dressing. Serve immediately while everything is fresh and crisp.
