Toss your diced chicken into a food processor along with the mayo, mustard, eggs, and all your seasonings (garlic, thyme, salt, black pepper, and cayenne). Pulse everything together until you've got a well-combined mixture that holds together nicely.

Warm up the olive oil in a large skillet over medium heat. While that's heating, scoop out about ¼ cup of the chicken mixture, shape it into a patty with your hands, then press it gently into the breadcrumbs to coat both sides evenly.

Place your breaded patties into the hot skillet and let them sizzle for 3 to 4 minutes without moving them. Carefully flip each patty over and continue cooking for another 2 to 3 minutes until they're beautifully golden brown and crispy on both sides.
