Crispy Baked Zucchini Fries (Print Version)

01 - 2 medium fresh zucchini
02 - 1 large egg
03 - 3/4 cup freshly grated Parmesan cheese

04 - 1/4 teaspoon garlic powder
05 - 1/4 teaspoon freshly ground black pepper (optional)

# Instructions:

01 - Heat your oven to 425°F and line a large baking sheet with parchment paper. Give the parchment a light coating of cooking spray to prevent sticking.
02 - Slice each zucchini lengthwise into quarters, then cut each quarter in half lengthwise again to create 8 long strips per zucchini. Cut each strip crosswise once to make about 16 fry-shaped pieces per zucchini, roughly 4 inches long and half an inch thick. If your zucchini pieces seem wet, gently pat them dry with paper towels.
03 - Get two shallow dishes ready - crack the egg into one bowl and beat it well. In the second bowl, mix together the grated Parmesan, garlic powder, and black pepper until evenly combined.
04 - Using one hand for the egg and another for the cheese mixture, dip each zucchini stick first into the beaten egg, letting excess drip off. Then press it into the Parmesan mixture, making sure all sides are well coated. Arrange the coated fries on your baking sheet in a single layer, making sure they don't touch each other.
05 - Bake for 15-20 minutes, flipping the fries over and rotating the pan halfway through cooking. They're ready when they turn a lovely golden brown color. Cooking time may vary depending on how thick your zucchini strips are.
06 - Turn on your broiler and place the fries under it for 2-3 minutes until they become darker golden and beautifully crispy. Watch them carefully so they don't burn!

02 - Use one hand for dipping in egg and the other for coating with cheese to prevent the mixture from getting clumpy
