Dice the onion and red potatoes into bite-sized chunks. Slice the carrots and celery into hearty pieces. Mince the garlic finely. Add all these fresh ingredients to your crockpot (4-5 quart size works best).

Place your stew meat in a bowl and sprinkle with flour, salt, and pepper. Toss everything together until the meat is nicely coated with the seasoned flour mixture.

Heat a large skillet over medium-high heat until it's nice and hot. Add the cooking oil and let it shimmer. Place the floured beef in the pan and let it sear without stirring until you get a beautiful brown crust on one side. Then give it a stir and brown another side. Transfer all that flavorful meat to your crockpot.

Turn the heat down to medium-low under the same skillet. Pour in the beef broth and add Dijon mustard, Worcestershire sauce, soy sauce, brown sugar, dried rosemary, and thyme. Stir gently while scraping all those delicious browned bits from the bottom of the pan - that's where the flavor lives!

Pour your aromatic broth mixture over everything in the crockpot and give it all a good stir to combine. Cover with the lid and cook on high for 4 hours or low for 8 hours until everything is tender and your home smells amazing.

Once cooking is complete, stir the stew well. The potatoes will slightly break down, naturally thickening the gravy. Taste and adjust seasonings if needed - maybe a pinch more salt or pepper. Ladle into bowls and serve piping hot with crusty bread for the perfect comfort meal!
