Start by slicing your onion into half moons, peeling and slicing the potatoes into even pieces, and mincing the garlic. Brown the ground beef in a pan until cooked through, then drain off any excess fat.

Add all ingredients except the cheese to your crockpot: the browned beef, sliced potatoes, onion, garlic, kidney beans (with liquid), diced tomatoes (with liquid), cream of chicken soup, and all seasonings. Give everything a good stir to combine well.

Cover your crockpot and let it work its magic! Cook on high for 4 hours or on low for 8 hours, until the potatoes are tender.

Once cooking is complete, sprinkle the grated cheddar cheese over the top. Cover and let it melt for about 10 minutes before serving your delicious casserole.
