Easy Crockpot Cowboy Casserole (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 large onion, sliced into half moons
02 - 1 pound ground beef
03 - 3 large potatoes, peeled and sliced
04 - 1 clove garlic, minced
05 - 2 cans kidney beans with liquid
06 - 15 ounce can diced tomatoes with liquid
07 - 10.5 ounce can cream of chicken soup

→ Seasonings

08 - 1/2 teaspoon dried oregano
09 - 1 teaspoon Italian seasoning
10 - 1 teaspoon salt
11 - 1/4 teaspoon cracked pepper

→ Topping

12 - 1.5 cups grated cheddar cheese

# Instructions:

01 - Start by slicing your onion into half moons, peeling and slicing the potatoes into even pieces, and mincing the garlic. Brown the ground beef in a pan until cooked through, then drain off any excess fat.
02 - Add all ingredients except the cheese to your crockpot: the browned beef, sliced potatoes, onion, garlic, kidney beans (with liquid), diced tomatoes (with liquid), cream of chicken soup, and all seasonings. Give everything a good stir to combine well.
03 - Cover your crockpot and let it work its magic! Cook on high for 4 hours or on low for 8 hours, until the potatoes are tender.
04 - Once cooking is complete, sprinkle the grated cheddar cheese over the top. Cover and let it melt for about 10 minutes before serving your delicious casserole.

# Notes:

01 - This hearty casserole can be customized! Try adding black beans to stretch the meal further
02 - For extra flavor, try using fire-roasted diced tomatoes or adding a can of green chiles
03 - You can use red potatoes and leave the skins on for extra nutrition
04 - The casserole freezes well - cool completely before storing in a freezer-safe container
