Fresh Summer Salad (Print Version)

# Ingredients:

→ Fresh Vegetables

01 - 4 mini or Persian cucumbers
02 - 8 fresh radishes (about one bunch)
03 - 2 green onions, thinly sliced
04 - 1 tablespoon fresh dill, roughly chopped

→ Dressing

05 - 2 tablespoons extra virgin olive oil
06 - 1½ tablespoons fresh lemon juice (from half a lemon)
07 - Kosher salt, to taste
08 - Freshly ground black pepper, to taste

# Instructions:

01 - Using a sharp knife or mandoline slicer, cut the radishes and cucumbers into thin, even slices. A mandoline works wonderfully here since it creates perfectly uniform slices and speeds up the process significantly.
02 - In a small mixing bowl, whisk together the olive oil, fresh lemon juice, salt, and pepper until well combined.
03 - Add the sliced cucumbers, radishes, green onions, and fresh dill to a medium bowl. Pour the dressing over the vegetables and toss gently to coat everything evenly.
04 - Transfer your beautiful salad to a serving bowl and give it a final sprinkle of salt and pepper if desired. Serve immediately while everything is crisp and fresh.
