Grab a bowl or mason jar and combine the chia seeds, milk, maple syrup, and vanilla if you're using it. If you're using a mason jar, just pop the lid on and give it a good shake to mix everything perfectly together.

Once everything is nicely combined, let your mixture sit for about 5 minutes, then give it another good stir or shake to break up any stubborn chia seed clumps. Cover it up and pop it in the fridge to set for 1-2 hours, or even better, let it work its magic overnight. Your pudding should be beautifully thick and creamy, not watery at all.

If your pudding isn't quite thick enough for your liking, simply stir in about 1 more tablespoon of chia seeds and let it chill in the fridge for another 30 minutes or so until it reaches that perfect creamy consistency.

Top with your favorite fruits, granola, nut butter, or whatever makes your heart happy. This delicious pudding will keep beautifully in the fridge for 5-7 days in an airtight container, making it perfect for meal prep.
