# Ingredients:

01 - 2 tablespoons toasted sesame oil
02 - 1 bunch of green onions, whites and greens separated
03 - 2 garlic cloves, finely minced
04 - 1 tablespoon fresh ginger, grated
05 - 1½ cups shredded carrots
06 - ¼ cup low-sodium soy sauce
07 - 8 cups quality chicken broth

08 - 24 ounces frozen mini wontons
09 - 3 cups fresh baby spinach leaves

→ Garnish

10 - Chili crisp oil for drizzling
11 - Toasted sesame seeds for sprinkling
12 - Sliced green onion tops

# Instructions:

01 - Place a large pot or Dutch oven over medium heat and add the sesame oil. Let it warm up for about 30 seconds until it's nice and fragrant.
02 - Slice your green onions, keeping the white parts separate from the green tops. Toss the white parts into your heated oil and let them sizzle for a minute until softened. Then add your minced garlic and grated ginger, stirring everything together for another minute until wonderfully aromatic.
03 - Fold in the shredded carrots and pour in the soy sauce. Give everything a good stir so the carrots get coated in all those delicious flavors.
04 - Pour in your chicken broth and turn up the heat. Let the soup come to a rolling boil - this should take just a few minutes.
05 - Once your soup is bubbling away, drop in the frozen wontons straight from the freezer along with the fresh spinach. Let everything simmer together for 5 to 6 minutes until the wontons are fully cooked and floating, and the spinach has wilted into the broth.
06 - Ladle the hot soup into bowls and finish each serving with a sprinkle of those reserved green onion tops, a generous drizzle of chili crisp for some heat, and a scattering of sesame seeds for crunch.
