Easy Garlic Chicken Stir Fry (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 pound boneless skinless chicken breast, cut into 1 inch pieces
02 - 1 cup broccoli florets
03 - 1 cup mushrooms, halved
04 - 1 yellow bell pepper, cored, seeded and thinly sliced
05 - 4 cloves of garlic, minced

→ Sauce & Seasonings

06 - 3/4 cup chicken broth
07 - 2 tablespoons soy sauce
08 - 2 teaspoons sesame oil
09 - 1 tablespoon brown sugar
10 - 2 teaspoons cornstarch
11 - Salt and pepper to taste

→ Cooking Oils

12 - 1 tablespoon + 1 teaspoon vegetable oil, divided

# Instructions:

01 - Heat 1 teaspoon of oil in a large pan over medium-high heat.
02 - Add broccoli, mushrooms, and bell pepper to the pan. Cook for 5-6 minutes until tender. Remove vegetables to a plate and cover with foil to keep warm.
03 - Wipe pan clean, then heat remaining tablespoon of oil over high heat. Add chicken in a single layer, season with salt and pepper, and cook 3-4 minutes per side until browned and cooked through.
04 - Reduce heat to medium, add minced garlic and cook for 30 seconds.
05 - Return vegetables to pan. In a small bowl, whisk together chicken broth, sugar, soy sauce, sesame oil, and cornstarch. Pour over chicken mixture and simmer 1-2 minutes until sauce thickens.
06 - Serve hot, with steamed rice if desired.
