Soak the rice in a bowl of water for about 20-30 minutes. Rinse thoroughly in a colander until water runs clear, then drain well and set aside.

Heat olive oil in a large skillet over medium heat. Add onions and garlic, cooking until they become soft, fragrant and translucent.

Add the drained rice to the skillet and stir continuously for a minute or two. This toasting step adds wonderful flavor to the final dish.

Pour in the chicken stock, give everything a good stir, and bring to a boil. Cover the pot, reduce heat to low, and simmer for 12-15 minutes without peeking under the lid!

When rice is cooked and liquid is absorbed, fluff gently with a fork. Place a clean kitchen towel over the pot, replace the lid, and let it rest for 5 minutes to absorb excess moisture.

Remove towel and lid, then add the fresh herbs, lemon zest, and lemon juice. Season with salt and pepper, stir everything together, and serve your fragrant Greek lemon rice warm.
