Zesty Greek Lemon Rice (Print Version)

# Ingredients:

→ Rice Base

01 - 200g long grain rice, soaked and drained
02 - 60ml extra virgin olive oil
03 - 1 onion, finely chopped
04 - 2 garlic cloves, minced
05 - 500ml chicken stock

→ Flavoring

06 - 2 tablespoons fresh dill, finely chopped
07 - 1 teaspoon lemon zest (from 1 lemon)
08 - Juice of 1 lemon
09 - 2 tablespoons fresh parsley, finely chopped
10 - Salt and pepper to taste

# Instructions:

01 - Soak the rice in a bowl of water for about 20-30 minutes. Rinse thoroughly in a colander until water runs clear, then drain well and set aside.
02 - Heat olive oil in a large skillet over medium heat. Add onions and garlic, cooking until they become soft, fragrant and translucent.
03 - Add the drained rice to the skillet and stir continuously for a minute or two. This toasting step adds wonderful flavor to the final dish.
04 - Pour in the chicken stock, give everything a good stir, and bring to a boil. Cover the pot, reduce heat to low, and simmer for 12-15 minutes without peeking under the lid!
05 - When rice is cooked and liquid is absorbed, fluff gently with a fork. Place a clean kitchen towel over the pot, replace the lid, and let it rest for 5 minutes to absorb excess moisture.
06 - Remove towel and lid, then add the fresh herbs, lemon zest, and lemon juice. Season with salt and pepper, stir everything together, and serve your fragrant Greek lemon rice warm.
