Remove the cores from the green apples and chop them into small pieces.

Combine the diced apples, still water, and honey in a large saucepan. Bring the mixture to a boil, then lower the heat and let it simmer gently for about 15 minutes. As the apples soften, press them against the side of the pan to release more flavor. Remove from heat and allow to cool completely.

Pour the cooled mixture through a fine mesh strainer into a bowl or pitcher. For each serving, add about an inch of the apple syrup to the bottom of a glass, top with sparkling water, add ice if desired, and enjoy!
