12 - 1 tablespoon tomato paste
13 - 1 can (14 oz/400 ml) coconut milk
14 - 1 lb (450 g) fresh green beans, trimmed and cut into thirds
15 - 1/2 lb (225 g) baby potatoes, halved

→ Finishing Touches

16 - Juice of half a lime
17 - Fresh cilantro, handful
18 - Salt and black pepper to taste

# Instructions:

01 - Warm the coconut oil in a large skillet over medium heat. Toss in the cumin seeds and let them sizzle until they become fragrant and start popping slightly.
02 - Add your diced onions to the pan and cook them for about 2-3 minutes until they turn soft and see-through. Then add the minced garlic and ginger, stirring everything together for another minute until your kitchen smells amazing.
03 - Mix in the ground cumin, coriander, paprika, turmeric, chili flakes, and salt. Keep stirring for 1-2 minutes to let those spices bloom and release their flavors.
04 - Stir in the tomato paste until it's well combined, then pour in the entire can of coconut milk. Give everything a good stir to create your curry base.
05 - Toss in the green beans and halved baby potatoes, making sure they're nicely coated in that creamy curry sauce.
06 - Turn the heat down to low and cover your pan. Let everything simmer gently for 20-25 minutes, or until the potatoes are fork-tender and the green beans are cooked through but still have a little bite.
07 - Squeeze in the lime juice and taste your curry. Add more salt and freshly ground black pepper as needed to make it just right.
08 - Right before you're ready to eat, scatter fresh cilantro over the top. Serve this beauty hot alongside steamed basmati rice or warm naan bread.
