Easy Ground Beef Vegetable Soup (Print Version)

# Ingredients:

→ Meat & Seasonings

01 - 1 pound lean ground beef
02 - 1 teaspoon salt, plus extra to taste
03 - 1/2 teaspoon black pepper
04 - 1 teaspoon ground thyme
05 - 1 teaspoon oregano

→ Fresh Produce

06 - 1 cup sweet onions, diced
07 - 3-5 cloves garlic, minced
08 - 3 stalks celery, diced
09 - 1 pound potatoes, diced

→ Pantry & Frozen Items

10 - 1 teaspoon vegetable oil
11 - 32 ounces canned whole tomatoes
12 - 4 cups beef broth
13 - 1 pound frozen mixed vegetables
14 - 1 teaspoon granulated sugar
15 - 1 teaspoon beef bouillon (optional)

# Instructions:

01 - Heat a large pot or Dutch oven (6qt or larger) on the stovetop. Add vegetable oil and once hot, sauté onions until softened. Add garlic and cook for another 30-60 seconds until fragrant.
02 - Add ground beef to the pot. Season with 1 teaspoon salt and 1/2 teaspoon black pepper. Cook until the meat is no longer pink.
03 - Stir in celery, whole tomatoes, beef broth, potatoes, thyme, and oregano. Bring to a boil, then reduce heat and simmer for 5-7 minutes until potatoes are tender.
04 - Add frozen mixed vegetables and return to a boil. Stir in sugar and beef bouillon. Adjust seasoning with salt to taste. Remove from heat and serve hot.

# Notes:

01 - This hearty soup can also be made in a slow cooker (4 hours on high/8 hours on low) or Instant Pot (5 minutes high pressure + 5 minutes natural release).
02 - If using ground beef that's less than 90% lean, drain excess fat after browning the meat.
