Mediterranean Gyro Pizza (Print Version)

# Ingredients:

→ Fresh Tzatziki Sauce

01 - 1 fresh garlic clove, finely minced
02 - ½ English cucumber, freshly shredded
03 - 1 cup thick Greek yogurt
04 - 1 tablespoon fresh dill, finely chopped
05 - 1 tablespoon freshly squeezed lemon juice
06 - ¼ teaspoon kosher salt
07 - ¼ teaspoon freshly ground black pepper

→ Mediterranean Pizza Base

08 - 1 ball of pizza dough (about 1 pound), homemade or store-bought
09 - Nonstick cooking spray for the stone
10 - 1 cup creamy hummus
11 - ½ pound fresh mozzarella cheese, cut into bite-sized cubes
12 - ½ pound seasoned gyro meat, ready to use
13 - ¼ small red onion, sliced paper-thin
14 - ½ cup fresh cherry tomatoes, sliced in half
15 - ½ cup English cucumber, finely diced
16 - ⅓ cup crumbled feta cheese

# Instructions:

01 - In a medium mixing bowl, combine the minced garlic, shredded cucumber, Greek yogurt, fresh dill, lemon juice, salt, and black pepper. Stir everything together until it's well blended and creamy. Set aside while you work on the pizza.
02 - Place your pizza stone in the oven and preheat it to 400°F. This will ensure your crust gets perfectly crispy.
03 - Take your pizza dough and gently toss and stretch it into a nice 14-inch circle. Don't worry if it's not perfectly round - rustic looks great too!
04 - Once your oven is hot, carefully remove the pizza stone and give it a light spray with cooking spray. Place your stretched dough on the stone and slide it back into the oven. Bake for 6 minutes to get the base started.
05 - Remove the pizza from the oven and spread the hummus evenly across the partially baked crust. Scatter the mozzarella cubes, gyro meat, and thin red onion slices over the hummus layer.
06 - Return the pizza to the oven for another 8 minutes, or until the cheese is beautifully melted and bubbly. Remove from oven and immediately top with the fresh cherry tomatoes, diced cucumber, and crumbled feta. Slice and serve alongside the homemade tzatziki sauce.
