Hamburger Steak with Gravy (Print Version)

# Ingredients:

→ For the beef patties

01 - 1 ¼ pounds lean ground beef (90% lean works best)
02 - 1 large fresh egg
03 - ¼ cup dried breadcrumbs (not the fresh kind)
04 - ½ cup yellow onion, finely chopped
05 - 1 teaspoon Italian herb seasoning
06 - ½ teaspoon fine sea salt
07 - ¼ teaspoon freshly ground black pepper
08 - 1 tablespoon good quality olive oil for cooking

→ For the mushroom gravy

09 - 3 tablespoons unsalted butter
10 - 8 ounces fresh mushrooms, sliced (white button or cremini work great)
11 - 1 medium yellow onion, thinly sliced
12 - 1 garlic clove, minced fine
13 - 3 tablespoons all-purpose flour
14 - 1 ½ cups rich beef broth (chicken broth works too)
15 - 2 teaspoons Worcestershire sauce
16 - ½ teaspoon salt, or to taste
17 - ¼ teaspoon ground black pepper
18 - Fresh parsley, chopped for garnish

# Instructions:

01 - In a large mixing bowl, gently combine the ground beef with egg, breadcrumbs, diced onion, Italian seasoning, salt, and pepper. Handle the meat lightly - don't overwork it or you'll end up with tough patties. Shape the mixture into 4-5 oval patties, each about ½ inch thick.
02 - Heat olive oil in your skillet over medium-high heat. Cook the patties for 5 minutes on each side until they're nicely browned and reach an internal temperature of 160°F. Transfer them to a plate and cover with foil to keep warm while you make the gravy.
03 - In the same skillet (don't clean it - those browned bits add flavor!), melt the butter. Add the sliced mushrooms and onions, cooking for 4-5 minutes until the onions become translucent and the mushrooms are golden.
04 - Stir in the minced garlic and cook for just 30 seconds until fragrant - don't let it burn!
05 - Sprinkle the flour over the vegetables and cook for another 30 seconds, stirring constantly. Gradually whisk in the beef broth, making sure to scrape up all those delicious browned bits from the bottom of the pan. Bring the mixture to a gentle boil, then let it simmer for 3 minutes until it thickens into a glossy gravy.
06 - Stir in the Worcestershire sauce, salt, and pepper. Nestle the cooked hamburger steaks back into the skillet, spooning the gravy over them. Let everything simmer together for 5 more minutes to meld the flavors.
07 - Remove from heat and sprinkle with fresh chopped parsley. Serve immediately over creamy mashed potatoes with a side of steamed broccoli or green beans for a complete comfort food meal.

# Notes:

01 - This classic comfort food dish is also known as Salisbury steak and makes for the perfect weeknight dinner that feels special enough for company.
02 - For extra flavor, try adding shredded cheese or crispy bacon bits to the meat mixture, or top the finished steaks with melted Swiss cheese.
03 - You can prepare the hamburger mixture up to 8 hours ahead - just cover and refrigerate until ready to cook, which makes dinner prep much easier.
04 - Leftovers keep beautifully in the fridge for up to 3 days and can be frozen for up to 2 months - just reheat gently to avoid overcooking.
05 - If using ground turkey instead of beef, cook to an internal temperature of 165°F rather than 160°F for food safety.
