High Protein Pasta Dish (Print Version)

# Ingredients:

01 - 10 oz (300 g) chickpea pasta (or your preferred high-protein pasta)

→ Creamy Sauce

02 - 2 cups (400 g) cottage cheese
03 - 1 cup (250 g) tomato sauce or passata
04 - 6-8 fresh basil leaves

→ For Sautéing

05 - 1 tablespoon olive oil
06 - 1 medium onion, finely diced
07 - 2 garlic cloves, finely chopped
08 - ¾ lb (350 g) turkey sausage, cut into bite-sized pieces

→ Finishing Touches

09 - ⅓ cup (30 g) grated Parmesan
10 - 2 tablespoons fresh parsley, finely chopped
11 - Salt and freshly ground black pepper to taste

# Instructions:

01 - Get a large pot of water boiling, add a generous pinch of salt, and cook your chickpea pasta until it's perfectly al dente (check the package for timing). Before draining, save about 1-2 cups of the starchy pasta water for later.
02 - While your pasta is cooking, throw the cottage cheese, tomato sauce, and fresh basil leaves into a blender. Blend until everything is smooth and creamy, then set aside.
03 - Heat up the olive oil in a large skillet over medium heat. Add the diced onion and chopped garlic, sautéing for 2-3 minutes until they become fragrant and translucent.
04 - Add the bite-sized turkey sausage pieces to the skillet and cook for about 5-6 minutes, stirring occasionally, until they're nicely browned all over.
05 - Pour your blended cottage cheese sauce into the skillet and stir it through the sausage mixture. Let it warm up for a minute or two. Then add your drained pasta and toss everything together. If the sauce seems too thick, splash in some of that reserved pasta water until you reach your desired consistency.
06 - Sprinkle in the grated Parmesan and chopped parsley, then season with salt and pepper to taste. Give everything a final toss and serve immediately. Feel free to add an extra sprinkle of Parmesan on top if you're feeling indulgent!
