# Ingredients:

→ For the fritters

01 - 3 to 4 cups canola oil
02 - 3 cups diced Fuji apples, peeled and cored (about 3 large or 4 medium apples)
03 - 2 teaspoons fresh lemon juice
04 - 1½ cups all-purpose flour (190g)
05 - ⅓ cup granulated sugar (65g)
06 - 1½ teaspoons baking powder
07 - ½ teaspoon salt
08 - ¾ teaspoon ground cinnamon
09 - ½ teaspoon ground nutmeg
10 - ½ cup whole milk (120ml)
11 - 1 large egg, lightly beaten
12 - 3 tablespoons unsalted butter, melted and slightly cooled (45g)
13 - 1 teaspoon pure vanilla extract

→ For the glaze

14 - 2 cups confectioners sugar (240g)
15 - 4 to 5 tablespoons milk or water (60-75ml)
16 - 1 teaspoon pure vanilla extract
17 - ¼ teaspoon ground cinnamon

# Instructions:

01 - Pour the canola oil into a large pot and heat over medium-high heat until it reaches 375°F (190°C).
02 - In a large bowl, toss the freshly diced apples with lemon juice to prevent browning and set aside.
03 - In a separate large mixing bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg until everything is well combined.
04 - Make a well in the center of your dry ingredients. Pour in the milk, beaten egg, melted butter and vanilla extract, then mix until just combined - don't overmix!
05 - Gently fold the diced apples into the batter until they're mostly coated.
06 - Once the oil reaches temperature, use a greased ¼ cup measuring cup to scoop batter. Transfer onto a greased metal spatula and flatten into a disc. Carefully lower into the hot oil, letting the batter slip off. Cook only 3-4 fritters at once to prevent crowding.
07 - Fry the fritters for about 2 minutes per side until they're beautifully golden brown. Transfer to paper towels to drain excess oil and cool slightly.
08 - While the fritters cool, whisk together confectioners sugar, milk, vanilla extract, and cinnamon in a bowl until smooth. The glaze should be somewhat thin - adjust consistency with more sugar or milk if needed.
09 - Dip each slightly cooled fritter into the glaze, covering completely. For extra sweetness, give them a second dip once the first layer sets or drizzle remaining glaze over the top.
