Whiskey Aioli Beef Burgers (Print Version)

# Ingredients:

→ Whiskey Aioli

01 - 2 tablespoons mayonnaise (homemade or store-bought)
02 - 1/2 tablespoon Irish whiskey (I love Jameson, but you can use lemon juice instead)
03 - 1 small clove garlic, pressed or finely minced
04 - Sea salt and freshly ground pepper to taste
05 - 1/8 teaspoon paprika (or more if you're feeling adventurous)

→ Grilled Onions

06 - 1 tablespoon olive oil
07 - 1 small sweet yellow onion, thinly sliced

→ Burgers

08 - 1 pound ground beef (85% lean grass-fed works best)
09 - Sea salt and freshly ground pepper to taste
10 - 2 ounces cheddar cheese, grated or sliced
11 - 2 slices thick-cut bacon, cooked and cut in half
12 - 2 hamburger buns

# Instructions:

01 - Mix mayonnaise, whiskey, garlic, salt, pepper and paprika together in a small bowl. Pop it in the fridge until you're ready to serve. The flavors will mingle and get even better while they chill!
02 - Heat olive oil in a large non-stick skillet over medium heat. Toss in the sliced onion and cook, stirring occasionally, until they're golden brown and smelling amazing - about 5 to 7 minutes. For extra richness, try adding a tablespoon of butter halfway through cooking. Set aside when done.
03 - Form the ground beef into two generous patties and season well with salt and pepper. Cook over medium heat until no pink remains - you want them cooked through but still juicy! Top with cheese during the last minute of cooking so it gets all melty and delicious.
04 - Place a cheesy burger patty on the bottom bun. Layer on the crispy bacon and those beautiful grilled onions. Drizzle generously with the whiskey aioli and crown with the top bun. Get ready for a flavor explosion!

# Notes:

01 - You can absolutely make the aioli without whiskey - just substitute lemon juice for a more traditional flavor.
02 - Feel free to use homemade or store-bought mayonnaise and burger buns.
03 - Smaller onions work better for burgers since they have smaller rings that are easier to eat.
04 - This recipe doubles or triples easily for family gatherings!
05 - For a smokier burger, try using smoked paprika. Want more heat? Substitute cayenne pepper.
