Creamy Citrus Dessert Bars (Print Version)

# Ingredients:

→ Crust

01 - 24 graham crackers (about 7oz/200g, or 1 ½ cups graham cracker crumbs)
02 - 2 tablespoons (30g) packed light brown sugar
03 - ⅓ cup (75g) unsalted butter, melted

→ Filling

04 - ¾ cup (6oz/170ml) sweetened condensed milk
05 - 1 large whole egg
06 - 2 large egg yolks
07 - 1 teaspoon (5ml) pure vanilla extract
08 - ½ cup (120ml) lime juice
09 - ⅓ cup (80ml) full fat yogurt
10 - Zest of 1 lime
11 - ¼ cup (50g) granulated sugar

→ Topping

12 - 1 cup cold heavy cream
13 - 1 tablespoon powdered sugar
14 - Lime zest for garnish

# Instructions:

01 - Heat your oven to 350°F. Take an 8x8-inch metal baking pan and line it with parchment paper, making sure to leave about 2 inches hanging over the sides - this will help you lift the bars out easily later.
02 - Break your graham crackers into chunks and toss them in a food processor. Pulse until you've got fine crumbs that remind you of wet sand. Mix in the brown sugar and melted butter until everything is evenly moistened. Press this mixture firmly into your prepared pan, creating an even base. Bake for about 15 minutes until it smells amazing and the edges start to darken a bit.
03 - While the crust is baking, grab a large bowl and whisk together the sweetened condensed milk, whole egg, egg yolks, and vanilla until smooth and silky. Pour in the lime juice and mix well. Fold in the yogurt, lime zest, and sugar until everything is perfectly combined. Once your crust is ready, gently pour this mixture over top and spread it out evenly.
04 - Lower your oven temperature to 325°F and bake for 15-20 minutes. You'll know it's done when the filling is just set but still has a slight jiggle in the center. Let it cool completely on a wire rack before covering and chilling in the refrigerator for at least 4 hours - overnight is even better if you can wait!
05 - Just before serving, whip the cold heavy cream in a mixer until it starts to thicken. Add the powdered sugar and continue beating until stiff peaks form (about 1-2 minutes). Spread this cloud-like topping over your chilled bars. Run a knife around the edges, then use the parchment paper to lift the entire slab onto a cutting board. Grate some fresh lime zest over the top for a pop of color and extra zing, then slice into squares. Serve these beauties nice and cold!
