Easy Korean Beef Bowl (Print Version)

# Ingredients:

01 - 1 pound 93% lean ground beef
02 - 1/4 cup chopped yellow onion
03 - 2 garlic cloves, crushed
04 - 1 teaspoon fresh grated ginger

→ Sauce

05 - 1/4 cup low sodium soy sauce
06 - 2 teaspoons light brown sugar
07 - 1 teaspoon sesame oil
08 - 1/2 teaspoon crushed red pepper flakes

→ For Serving

09 - 3 cups cooked brown rice
10 - 1 small cucumber, sliced with skin on
11 - 2 tablespoons Gochujang Sauce
12 - 1/2 tablespoon sesame seeds
13 - 2 scallions, sliced (white and green parts)
14 - Cooking spray

# Instructions:

01 - Mix together the soy sauce, 2 tablespoons water, brown sugar, sesame oil and red pepper flakes in a small bowl until well combined.
02 - Heat a large deep nonstick skillet over high heat. Give it a quick spray with cooking oil and add the ground beef. Break it up with a wooden spoon as it cooks until it's no longer pink, about 5 minutes.
03 - Toss in the chopped onion, crushed garlic and grated ginger. Cook everything together for about a minute until fragrant.
04 - Pour your prepared sauce over the beef mixture. Cover the skillet and let it all simmer on low heat for 10 minutes, allowing the flavors to meld together.
05 - Start with about 3/4 cup of rice in each bowl. Top with a generous scoop of the beef mixture (about 2/3 cup per bowl). Add sliced cucumbers, a dollop of Gochujang sauce, and finish with a sprinkle of sesame seeds and sliced scallions.
