Wash the sweet potatoes thoroughly and slice them into half-inch thick rounds. You can leave the skin on for extra texture and nutrients, or peel them if you prefer.

Set your oven to preheat at 400°F (200°C) so it's nice and hot when you're ready to bake.

Place your sweet potato rounds in a large mixing bowl. Pour the melted butter over them, then add the cinnamon, salt, and pepper. Use your hands or a spatula to toss everything together until each slice is well coated. If you want less mess, try putting everything in a large ziplock bag and shaking it up instead.

Lay the seasoned sweet potato slices on a baking sheet in a single layer, making sure to leave a bit of space between each piece so they can roast properly instead of steaming. Pop them in the oven and bake for 25 to 30 minutes until they're fork-tender.

While the sweet potatoes are baking, combine the maple syrup, chopped walnuts, remaining cinnamon, and thyme in a small bowl. Mix well and set aside.

Take the baking sheet out of the oven and spoon about a teaspoon of the maple walnut mixture onto each sweet potato slice, spreading it evenly across the top.

Return the tray to the oven and bake for another 8 to 10 minutes, or until the edges start to caramelize and turn golden brown.
