Easy Marinated Mozzarella Balls (Print Version)

# Ingredients:

→ Fresh Aromatics

01 - 2 tablespoons freshly chopped parsley or basil (or a mix of both)
02 - 2 tablespoons freshly squeezed lemon juice
03 - 2 teaspoons freshly grated lemon zest
04 - 1 garlic clove, finely grated

→ Seasonings & Oil

05 - ¼ teaspoon crushed red pepper flakes
06 - ¼ teaspoon fine sea salt
07 - ⅔ cup premium extra-virgin olive oil (plus extra if needed)

→ Cheese

08 - 8 ounces fresh ciliegine mozzarella balls, thoroughly drained and patted completely dry

# Instructions:

01 - In a clean medium-sized jar, combine the chopped herbs, fresh lemon juice, lemon zest, grated garlic, red pepper flakes, and sea salt. Add about ⅓ cup of the olive oil and stir everything together until well blended.
02 - Gently place the dried mozzarella balls into the jar with the herb mixture. Pour the remaining ⅓ cup olive oil over the top, making sure the cheese is completely submerged. Add a bit more oil if necessary to fully cover all the mozzarella.
03 - Seal the jar tightly and place it in the refrigerator for at least one hour to allow the flavors to infuse. These keep beautifully in the fridge for up to 5 days, getting more flavorful with time.

# Notes:

01 - This appetizer gets better with time - the longer it marinates, the more the mozzarella absorbs those wonderful Mediterranean flavors.
02 - Perfect for entertaining since you can prepare it completely ahead of time and just bring it out when guests arrive.
03 - Serve at room temperature for the best flavor - take it out of the fridge about 15 minutes before serving.
