Add your cubed sweet potatoes to a large cooking pot and pour in enough cold water to cover them by about an inch. Stir in a generous tablespoon of salt to season the cooking water.

Bring the water to a rolling boil over high heat, then lower the temperature to keep it at a steady, gentle boil. Let the sweet potatoes cook for 10-15 minutes until they're completely tender and can be easily pierced with a fork.

Carefully drain all the water from the potatoes and put them back in the same pot. Add your butter pieces, warmed milk, maple syrup, sea salt, and a few generous grinds of black pepper.

Using a potato masher, mash everything together until you achieve a smooth, creamy consistency. Taste and adjust seasoning as needed. Serve immediately with a pat of butter on top and fresh thyme leaves if you're using them.
